Budget-Friendly Recipes :: Honey BBQ Chicken Pizza

Several years back, my hubby and I ate at a California Pizza Kitchen for the first time. I remember glancing at the menu and spotting BBQ Chicken Pizza. It sounded yummy, and boy was I in heaven when I took my first bite! Several weeks later, I decided to try and recreate that heavenly pizza dish. Here is my version of that yummy pizza, and, I must say, it is one of our favorite dinners around here! Pair it with a salad, and you have a great Take-In night at home with the family! Not only is this pizza yummy, but very budget-friendly as well! Enjoy!

HONEY BBQ CHICKEN PIZZA

INGREDIENTS ::

1 Pillsbury Thin Pizza Crust

1 bottle of Sweet Baby Rays Honey BBQ Sauce

2 cooked chicken breasts, shredded

1 diced red or green pepper

1 diced medium onion

2 cloves minced garlic

1 can of mushrooms (optional)

1 bag of shredded cheese (your favorite or what you have on hand will work--I used Colby Monterrey Jack last night, but Shredded Mozzarella is great as well)

DIRECTIONS ::

--Preheat oven to 425 degrees. While oven is preheating, dice all of your veggies.

--Parbake your pizza crust just until the bottom starts to brown slightly.

--While pizza crust is cooking slightly, sautee all of your veggies and garlic minus the mushrooms (these are optional and you will add them lastly to avoid getting soggy) Add shredded chicken to the veggie mixture and warm through.

--Take pizza crust out of the oven and let cool slightly. Then, take your Honey BBQ Sauce (about half the bottle) and pour on top of the pizza. This will act as your pizza sauce.

--Now, if you are using mushrooms add them to the veggie/chicken mixture and toss thoroughly until mushrooms are incorporated.

--Spread the yummy chicken/veggie mixture on top of the BBQ sauce and pizza crust.

--Place the shredded cheese on top and bake for about 15-20 minutes at 350 degrees. Just until cheese is melted and crust is browned through all the way.

--Lastly, but certainly not least, Enjoy this yummy pizza! I don't think that you will be dissappointed!
