My hubby is not typically a chili-lover, but he raved about this one last night! Pair it with a nice grilled cheese sammie and you are all set for a cold winter evening! This is comfort food at its best! Enjoy! :)
White Chicken Chili
2 lbs. cooked shredded chicken breasts (you could also use left-over rotisserie chicken and just shred it up)
1 16oz. can of white cannelini beans, drained
2 large medium-diced onions 
2 cloves fresh diced garlic
1 medium green pepper diced (if you like a lot of spice, you could use a hot pepper or do both!)
1 cup fresh cilantro
1 cup chicken stock
2 cups half and half
1/2 cup sour cream
1 stick butter
2 Tbsp. cornstarch
1 1/2 tsp. chili powder
salt/pepper to taste
1 1/2 cups grated Monterrey Jack Cheese
Several dashes of Hot sauce--optional
DIRECTIONS:
Place 2 Tbsp. of your butter in a large skillet or Dutch Oven. Add your diced green pepper, onions, and garlic. While your veggies are sauteeing in the pan, season your shredded chicken with the chili powder and some salt and pepper.
Next, add the shredded chicken to the sauteed veggie mixture. Now, you will need to add your remaining 6 Tbsp. of butter. After the butter has melted down in the chicken/veggie mixture, add the 2 Tbsp. of corn starch. Make sure that the cornstarch gets cooked as you don't want to taste that! The cornstarch will give your chili a nice thick texture!
Go ahead and add your chicken stock as well as the 2 cups of half and half. Let the mixture start to thicken--this should only take few minutes,as the corn starch really does a great job! Next, add your white cannelini beans and let the mixture simmer for about 20 minutes on low.
Lastly, before you serve the chili, add the sour cream, cilantro, and Monterrey Jack cheese! Let it get all melted and yummy!
You can garnish with more cilantro and cheese if you like!

I know that it will be rewarding though, so I am excited for this challenge! If you read my post yesterday, you know that it is goal of our family this year to pay off a large chunk of our debt. While it is not alot of debt, we believe that being a good steward of our money is very important! In doing so, I am starting a weekly $40 grocery challenge! I will get $40 in cash each week to use on groceries, toiletries, paper/household goods, etc...
I am sure at this point you are thinking to yourself that I am crazy, right? Well, I believe that with much creativity in recipes and by planning a menu each week, that this can be done! I will be sharing with you my challenge each week! If I do not spend my allotted $40 each week, I can use it in conjunction with the next week's grocery money. I do plan on saving at least $5-$10 of the grocery money each week so that I can go to Sam's once a month to stock up on meat.
Drew and I headed out this morning to Publix and Sam's along with our stash of coupons, $40 grocery cash, and big smiles in anticipation of good deals! I do have to tell you that for this first week I used a $25 Sams gift card along with the grocery cash. All in all though I am pleased that I still have almost $10 left for the week and I got everthing you see pictured here. I am also planning on getting creative with my stockpile so I won't need to purchase much at the store!
Also, I have to tell you, you need to check out your local produce and farmer's markets for fresh produce and fruit. One thing I plan to do this year is eat more fresh fruits and veggies. Today,on the way home, I hit a produce market right near my house. Oh my word, I could not believe the awesome prices! Green and Red peppers were 8 for $1! At the grocery store, they are $2.99 a pound! I am just a little bit excited, can you tell? :-)
Here is what we ended up with at 3 different stops--Publix, Sams Club, and the Produce Market. All in all, of my $40 in cash, I spent $31 plus I used the $25 Sams gift card. Next week, I will be using cash only, so stay tuned!

I don't know about you all, but my husband and I have made it our goal this year to pay down as much debt as we possibly can. Now we don't have a ton of debt to pay off, but the little things do add up after awhile. We plan on using Dave Ramsey's Money Makeover to help us out-- GO HERE to check out his site. His principles are so convicting and we thoroughly believe that we can do this! As Dave says, "Live like no one else so later you will live like no one else!"
One of the things that I will be implementing to help us in our Money Makeover journey is starting a new $40 weekly grocery challenge. I will get $40 in cash to spend on groceries, toiletries, household items, etc... per week. I cannot go over my budget, and if I have some left over, it may be applied with the next week's $40! My family and I were very blessed this year in that we were able to travel to Murfreesboro, TN and spend over a week with my sister and her hubby! We had such a nice and relaxing time, but now it is time to get back to the swing of things!
